Ingredients
Minty Melon Shrimp Salad with Feta:
- 454 g Ocean Jewel Cooked Pacific White Shrimp™, thawed
- ½ cup Lime Ginger Honey Vinaigrette Salad Dressing (or similar)
- 1 cup english cucumber, cut in half lengthwise & thinly sliced
- ½ small red onion, slice thinly
- 4 cups cantaloupe, watermelon or honeydew melon, cut into in ½ inch cubes; use any kind or a combination of all three
- ½ cup chopped fresh mint leaves
- 1/3 cup feta cheese, crumbled & drained
- ground black pepper & salt to taste
- green lettuce leaves, washed & separated, optional to line bowl
Method
Prepare Shrimp: Follow the package instructions to prepare the shrimp.
Marinate Shrimp: Place the thawed shrimp in a bowl and add 1/3 cup of the salad dressing. Cover and refrigerate for 30 minutes to 1 hour to marinate.
Cook Shrimp: Heat a frying pan over medium-high heat. Add the shrimp along with the marinade, cooking and stirring for 2 to 4 minutes until the shrimp turn pink and opaque. Transfer to a bowl and set aside.
Prepare Salad: In a large bowl, combine the cucumber, red onion, diced melon, mint, feta, salt, and pepper. Add ⅔ cup of the remaining salad dressing and toss until evenly coated. Refrigerate for at least 1 hour to allow the flavors to blend.
Assemble Salad: If using lettuce leaves, line the bottom of the serving bowl with them. Add the melon salad mixture on top. Place the cooked shrimp over the salad and sprinkle with additional mint if desired.
Tips:
- Grill Option: Shrimp can be grilled right before serving the marinated melon salad, if preferred. Alternatively, cook the shrimp ahead of time and chill in the refrigerator until ready to serve.
- Melon Variety: Use any type or combination of melon based on preference or availability.
- Mint Substitute: If fresh mint isn’t available, use dried mint (1 tsp dried = 1 Tbsp fresh).
