Shrimp Skewers with Green Mango Salad and Lemon Aioli
 
Ingredients:  
6 x 31/40 Ocean Jewel Shrimp, raw, tail-off (Vannamei White or Black Tiger) (defrosted)
1 Lemon
1 oz Olive Oil
1 Green mango
Mango Salad:
1/2 tsp Garlic (chopped)
1 small Hot pepper (minced)
1 tsp Sugar
1 tbsp Lime juice
1 tbsp Mint (chopped)
2 Green onions (sliced)
1 tbsp Fish sauce
1 tbsp Roasted cashew pieces (optional)
Onion shoots (optional garnish)
Salt and pepper to taste
AIOLI MAYO:
1/4 cup Mayonnaise
1/4 tsp Garlic (minced)
1 tsp Lemon juice
Salt and pepper to taste
 
DIRECTIONS:

1. Peel mango and slice thinly (down to the pit). Cut into julienne (matchstick) pieces.

2. In a bowl, add garlic, hot peppers, sugar, green onions, fish sauce and lime juice. Mix well.

3. Place mango strips and mint into bowl with dressing mixture. Toss thoroughly.

4. Pre-soak 3 x 4” wooden skewers. Skewer Ocean Jewel shrimp, 2 per skewer. Lightly brush shrimp skewers with oil and place on grill (medium-high heat) for about 2 minutes per side.

5. On a rectangular plate, place 6 small portions of mango salad.

6. Place a shrimp skewer on each of the mango salad portions.

7. Add a dollop of aioli on each shrimp skewer. Sprinkle with the roasted cashew pieces.

8. Garnish with onion sprouts and lemon.
