Shrimp Provençale
 
Ingredients:  
1 Ocean Jewel Pinwheel Shrimp – Lightly Seasoned or Garlic Butter
3 tbsp Olive oil
2 cups Red bell peppers, chopped
1 cup Red onion, chopped
2 tbsp Parsley, chopped
3 Garlic cloves, large
1/2 tsp Fennel seeds
1 x 14 oz Can diced tomatoes in juice
3/4 cup Kalamata olives or other brine-cured black olives, pitted
1/2 cup Dry white wine
2 tbsp Tomato paste
1/2 cup Basil, chopped
 
DIRECTIONS:

1. In a heavy large skillet, sauté red bell peppers, onions, parsley, garlic and fennel seeds. Sauté until onion softens, about 8 minutes.

2. Add tomatoes with juice, olives, wine and tomato paste; bring to a boil.

3. Reduce heat to medium low, cover and simmer until flavours blend, about 10 minutes.

4. Spoon over shrimp and simmer until shrimp are opaque, about 3 minutes.

5. Mix in basil and season with salt and pepper.

6. Plate on bed of brown rice, quinoa or mixed lettuce.
