Shared Plate Shrimp Combo Appetizer
 
Ingredients:  
4 Ocean Jewel Filo Shrimp
8 oz Ocean Jewel Jalapeno Popcorn Shrimp
8 x 31/40 count Ocean Jewel Shrimp, Raw, Tail-off (Black Tiger or Vannamei White) (defrosted)
1 Lemon
1 Lime
4 tbsp Peaches and corn mint salsa (see below for recipe)
4 tbsp Fresh tomato cilantro salsa (see below for recipe)
4 tbsp Green mango salad (see below for recipe)
1 oz Lemon aioli (see below for recipe)
1 oz Ginger orange dip (bought at local grocer)
Onion shoot (for garnish)
PEACHES & CORN MINT SALSA:
2 tbsp Peaches (finely diced)
2 tbsp Niblets Corn
1 tsp Mint (chopped)
1 tsp Lemon juice
Combine all ingredients and season with salt and pepper to taste.
TOMATO CILANTRO SALSA WITH LIME:
4 tbsp Tomato (finely diced)
1 tsp Cilantro (finely chopped)
1/4 tsp Garlic (minced)
1 tsp Lime juice
Combine all ingredients and season with salt and pepper to taste.
GREEN MANGO SALAD:
1/2 tsp Garlic (chopped)
1 Small hot pepper (minced)
1 tsp Sugar
1 tbsp Lime juice
1 tbsp Mint (chopped)
2 Green onions (sliced)
1 tbsp Fish sauce
Combine all ingredients and season with salt and pepper to taste.
LEMON AIOLI:
1/4 cup Mayonnaise
1/4 tsp Garlic (minced)
1 tsp Lemon Juice
Combine all ingredients and season with salt and pepper to taste.
 
DIRECTIONS:

1. Skewer 2 Ocean Jewel Shrimp on each of the 4 pre-soaked, wooden skewers, 2 shrimp per skewer. Brush the shrimp skewers with oil and grill on medium/high heat for about 2 minutes/side.

2. Deep-fry the Ocean Jewel Jalapeno Popcorn Shrimp at 350 ºF until golden brown (about 2 minutes).

3. Deep-fry the Ocean Jewel Filo Shrimp at 350 ºF degrees for about 2-3 minutes. Drain on paper towel.

4. Place the Jalapeno Popcorn Shrimp in a small bowl and place bowl in the centre of a large platter or plate.

5. On one side of the platter, put 4 x 1 tbsp of the Peaches & Corn Mint Salsa.

6. Place 1 Filo Shrimp on each of the Peaches & Corn Mint Salsa dollops.

7. On each Filo Shrimp place a small dollop of Ginger Orange glaze. Garnish with a piece of mint.

8. On the other side of the platter, put 4 x 1 tbsp Green Mango Salad.

9. Place the shrimp skewers with a dollop of Lemon Aioli on each skewer. Garnish with onion shoots.

10. Place a ramekin of Tomato Cilantro Salsa on the platter and garnish the Jalapeno Popcorn Shrimp with lime wedges and sprigs of cilantro.

11. Serve
