Panko and Fine Herb Crusted Oven Baked Cod
 
Ingredients:  
2 pieces Ocean Jewel Breaded Cod Fillets
2 oz Melted butter
1/2 cup Panko crumbs
2 tbsp Parmesan cheese (optional)
1 tbsp Dry mixed herbs (or fresh)
1 tbsp Oil
1/4 cup White wine
1/4 cup Flour
Salt and pepper (to taste)
Lemon wedge
 
DIRECTIONS:

1. Preheat oven to 400 ┬║F.

2. Prepare crust by mixing together melted butter, Panko crumbs and herbs. Set aside.

3. Heat fry pan to medium high. Add oil. Season fish and dredge in flour. Pan sear for about 2 minutes per side, add the wine.

4. Add crust mixture on top and place in oven for about 8-10 minutes.

5. Serve with favourite starch and vegetable; garnish with lemon.
