Pan Seared Wild Pacific Salmon with White Wine Dill Sauce Garnished with Julienned Cucumber
 
Ingredients:  
2 x 4 oz pieces Ocean Jewel Wild Pacific Salmon Loins
2 tbsp Flour
1 tbsp Oil
1 tbsp Butter
1 tsp Finely chopped shallots
2 oz White wine
2 oz 35% cream
1 tsp Lemon juice
1/2 cup Julienned cucumber
Salt and pepper (to taste)
 
DIRECTIONS:

1. Season defrosted Ocean Jewel Wild Pacific Salmon loins, dust in flour.

2. Heat pan to medium-high heat. Add oil and sear salmon on each side for about 2-3 minutes per side.

3. Remove fish from pan. Add butter and shallots, add the white wine and cream, and let reduce to sauce consistency. Add lemon juice and season to taste.

4. Spoon sauce on top of salmon and garnish with the julienned cucumber. Serve with your favourite starch and vegetable of choice.
