Pan Seared Barramundi garnished with Artichoke, Tomatoes, Capers & Lemon Butter
 
Ingredients:  
1 piece Ocean Jewel Barramundi Fillet
1/4 cup Flour
1 tbsp Grape seed oil
1 tbsp Butter
1 tbsp Diced, seeded tomatoes
2 pieces Artichoke hearts, quartered
1 tsp Capers
1 tsp Chopped fresh parsley
1 tsp Lemon juice
1/4 cup White wine
Salt and pepper
 
DIRECTIONS:

1. Season Ocean Jewel Barramundi, dust in flour.
2. Heat pan on medium high heat. Add grape seed oil and cook fish on each side for about 2-3 minutes per side.
3. Remove fish from pan. Add the butter, tomatoes, artichokes, capers and sauté for about a minute.
4. Add the white wine, fresh parsley and lemon juice.
5. Spoon garnish on top of barramundi fillet.
6. Serve with your choice of starch and vegetable.
