Pan Seared Atlantic Haddock with Mussels & Clams
 
Ingredients:  
8 pieces Pana Pesca Blue Mussels (fully cooked)
8 pieces Pana Pesca Clams (fully cooked)
1 tbsp Parsley (chopped)
1 tbsp Cilantro (chopped)
1 tbsp Garlic butter
1 tbsp Shallots (finely chopped)
1/2 cup Tomato concassé (finely diced, skinless and seedless)
1 cup White wine
2 cups Coarsely cut leeks
1/4 cup Olive oil
2 tsp Phillips Seafood Seasoning
4 x 6 oz pieces Ocean Jewel Atlantic Haddock Fillets
Salt and pepper (to taste)
 
DIRECTIONS:

1. Season Ocean Jewel Northern Pacific Cod Fillets with Phillips Seafood Seasoning. Preheat skillet to medium high heat. Add half the olive oil to the pan. Place fillets in pan and cook about 2- 3 minutes per side. Remove fillets and put aside.

2. In the same skillet, add the rest of the olive oil, garlic butter, shallots, leeks, tomato concassé, mussels and clams. Sauté for about a minute. Add salt and pepper to taste.

3. Add white wine and cover for a couple of minutes. When you see the mussels and clams starting to open, place cod fillets in. Cook for about a minute.

4. Serve in nice shallow bowls. Evenly divide the leek, mussels and clams in the bowls. Place cod on top. Spoon on remaining juice. Garnish with herb of choice and lemon. Serve with toasted French stick wedge on the side (optional).
