Marinated Grilled Calamari
 
Ingredients:  
1 1/2 lb Ocean Jewel Loligo 5/8 Tube &Tentacle Squid
2 tbsp Fresh oregano finely chopped
2 tbsp Fresh basil finely chopped
1 tbsp Cilantro finely chopped
2 tbsp Parsley finely chopped (save 1/2 for the end)
2 cloves Garlic minced
2 tbsp Cajun seasoning (Phillips, etc)
1/4 cup White wine
1/4 cup Olive oil
2 oz Garlic herb butter
1 French stick
1 Lemon
Salt and pepper (to taste)
 
DIRECTIONS:

1. Cut defrosted squid tubes along the sides, score them but not all the way through. Place in a bowl with the tentacles.

2. Place the remaining ingredients for the marinade in a separate bowl (except the garlic butter, white wine, lemon and French stick), mix together and pour on top of the squid. Marinate for approximately 1 hour.

3. You can do cook this on the barbeque. Pre-heat to high, place squid on the grill, draining excess marinade. Grill for about 1 to 1-1/2 minutes. At the same time, place a large frying pan on the grill. Add the garlic butter to the fry pan. When the butter is about to turn brown, add the squid from the grill into the pan, then add the white wine and lemon juice.

4. Serve with the toasted French stick and remaining chopped parsley, garnish with lemon.
