Grilled Ponzu Glazed Shrimp Skewer Salad with Mango
 
Ingredients:  
10 x 26/30 count Ocean Jewel Shrimp (Black Tiger or Vannamei White EZ Peel Shrimp) (defrosted)
1 tsp Oil
1/4 tsp Sesame seed oil
2 tbsp Ponzu soya
1 tbsp Oyster sauce
1/4 tsp Crushed garlic
1 cup Boston bib lettuce
2 leaves Radicchio
2 sprigs Fresh cilantro
2 tbsp Kraft Mango Salad Dressing
Mango (julienned), lemon wedge and lime wedge for garnish
Salt and pepper to taste
 
DIRECTIONS:

1. For the Ponzu glaze, combine the Ponzu soya, oyster sauce and crushed garlic. Set aside.
2. Skewer 5 thawed Ocean Jewel Shrimp on each pre-soaked wooden skewer. Brush shrimp with the oils, lightly season with salt and pepper.
3. Grill or broil the skewers for about 2-3 minutes. Brush the Ponzu glaze on the shrimp. Keep warm.
4. Arrange the lettuce on plate of choice. Place the shrimp skewers on top. Drizzle with mango dressing.
5. Garnish with julienne of mango, cilantro and lemon and lime wedge.
6. Serve.
