Grilled Northern Pacific Cod with Lemon Tomato Caper Butter
 
Ingredients:  
4 x 4 oz pieces Ocean Jewel Northern Pacific Cod
4 oz Butter
1 tbsp Capers
2 tbsp Tomato concassé (finely diced, skinless and seedless)
2 tbsp Lemons (diced)
1 tbsp Parsley (chopped)
2 tbsp Olive oil
Salt and pepper
 
DIRECTIONS:

1. Preheat grill on medium high heat.
2. Season Ocean Jewel North Pacific Cod pieces with salt and pepper. Brush with olive oil.
3. Place on grill for about 3 minutes per side.
4. Preheat fry pan on medium high heat. Add butter. Just as the butter starts turning brown, add the capers, tomatoes, lemons and chopped parsley.
5. Sauté for about 30 seconds. Spoon on top of the cod fillets. Serve on a bed of salad or with your favourite starch and vegetable of choice.
