Griiled Shrimp Skewer Salad
 
Ingredients:  
12 x 31/40 count Ocean Jewel Shrimp, Raw, Tail-On (Black Tiger or Vannamei White) (defrosted)
2 cups Spring mix
1/2 cup Lamb’s lettuce
1/2 cup Frisée
1 Tomato (diced)
1 cup Fresh pineapple (diced in 1/2 inch cubes)
1 cup Mango (diced in 1/2 inch cubes)
1 oz Vegetable oil
1 Lemon
Corn and fresh pea shoots or fresh dill and lemon for garnish (optional)
Salt and pepper to taste
DRESSING:
1/4 cup Olive oil
1/4 cup White balsamic vinegar
2 tbsp Honey
1 tsp Dijon mustard
1 tbsp Lemon juice
2 tbsp Dill (chopped)
Salt and pepper to taste
 
DIRECTIONS:

DIRECTIONS:

1. For the salad dressing, combine all ingredients in a jar with a lid. Shake well. Set aside.

2. Place the mango and pineapple cubes alternately on pre‐soaked wooden skewers.

3. Skewer Ocean Jewel Shrimp on pre-soaked, wooden skewers, 6 shrimp per skewer.

4. Lightly season all the skewers (shrimp and mango/pineapple).

5. Brush with a little vegetable oil.

6. Preheat grill to medium-high and place skewers on grill. Grill 2 minutes per side.

7. Arrange lettuce and tomatoes on two plates. Drizzle with dressing.

8. Remove mango and pineapple chunks from skewer and place on salad.

9. Place shrimp skewers on plates.

10. Garnish with corn, pea shoots or fresh dill and lemon.
