Griiled Salmon Skewers On A Cucumber Salad
 
Ingredients:  
1 x 6 oz fillet Ocean Jewel Atlantic Salmon Fillet
1 cup Cucumber, long slices/ribbons
1 tbsp Red pepper, diced
1 tsp Red onion, diced
1 tbsp Chopped fresh dill
1 tbsp White balsamic vinegar
2 tbsp Olive oil
1 tsp Melted butter
Lemon wedge
Salt and pepper to taste
 
DIRECTIONS:

1. Cut defrosted Ocean Jewel Atlantic Salmon Fillet in half lengthwise. Cut into 4 cubes x 2.

2. Skewer salmon on pre-soaked wooden skewers.

3. Slice cucumber lengthwise thinly on a mandolin. Place in a bowl.

4. Add diced red peppers, red onion, chopped dill, olive oil and white balsamic vinegar. Season to taste. Set aside.

5. Season salmon skewers, brush with melted butter. Place on preheated grill on medium-high. Cook for about 3 -5 minutes turning occasionally.

6. Place cucumber salad on a plate, set salmon skewers on top.

7. Serve.
