Filo Shrimp Bites with Mango-Pineapple Rum Salsa and Chipotle Mayo
 
Ingredients:  
6 Ocean Jewel Crispy Filo Shrimp
1 Lemon - Reserve lemon wedges for garnish
Onion shoots (optional)
Mango‐Pineapple Salsa:
1/4 cup Mango (finely diced)
1/4 cup Pineapple (finely diced)
1 tsp Cilantro (finely chopped) ‐ Keep 6 leaves for garnish
1 tbsp Rum
Salt and pepper to taste
Chipotle Mayo:
1 tsp Chili sauce
2 tbsp Mayonnaise
1 tsp Lemon juice
Salt and pepper to taste
 
DIRECTIONS:

1. Combine all ingredients for Mango-Pineapple Salsa and set aside.

2. Combine all ingredients for Chipotle Mayo and set aside.

3. Deep-fry Ocean Jewel Crispy Filo Shrimp at 350 ºF for about 2-3 minutes, or until golden brown.

4. Place on paper towel to remove excess oil.

5. On a rectangular plate (or plate of choice), place 6 x 1 teaspoon of Salsa on the plate.

6. Place a Filo Shrimp on each teaspoon of Salsa (6 in total); add one dollop of Chipotle Mayo on each Filo Shrimp.

7. Place 1 cilantro leaf (or onion shoots) on each.

8. Garnish with lemon wedges and serve.
