East Coast Lobster Rolls
 
Ingredients:  
1 lb Ocean Jewel Lobster Meat (cooked)
1/4 cup Celery, finely diced
1/2 cup Mayonnaise
1/4 tsp Pepper
6 New England-style top sliced hotdog buns
Butter
1 tbsp Crispy bacon bits
2 tbsp Tomatoes, dices
Shoots for garnish
 
DIRECTIONS:

1. Strain excess water from defrosted Ocean Jewel Lobster Meat. Cut into small, bite size pieces. Place in bowl. Add celery, mayonnaise and pepper. Mix gently, and then place in fridge.

2. Butter the buns on each side and pan fry until golden brown. Stuff about 2-3 oz of the lobster mix into each bun.

3. Garnish with the crispy bacon, tomato and shoots.

4. Serve.

NOTE: For a great appetizer that looks awesome, use mini New England-style.
