Crispy Fried Coconut Shrimp with Spicy Mango Pineapple Dip
 
Ingredients:  
6 piece Ocean Jewel Ultimate Coconut Shrimp
Dip:
1 piece Mango
1 tbsp Sriracha chili sauce
4 tbsp Sweet Thai chili sauce
1 tbsp Fine diced pimento
1 tbsp Fine diced pineapple
1 tsp Lemon juice
Lemon wedges for garnish
Cilantro sprigs for garnish
Arugula for garnish
 
DIRECTIONS:

1. To prepare the dip, put all the ingredients except the diced pineapple and pimento into a food processor and puree smooth. Fold in the diced pineapple and pimentos. Set aside.

2. Deep fry the Ocean Jewel Ultimate Coconut Shrimp (350 ºF for 3-4 minutes) drain on paper towel.

3. Serve on with or without rice on favorite plate or basket with dip. Garnish with lemon wedge, arugula, or sprig of cilantro and serve.
