Crab Stuffed Squid
 
Ingredients:  
6 pieces Ocean Jewel Squid Tubes
6 x 2 oz Phillips® Crab Cakes
2 tbsp Olive oil
2 cups Tomato sauce
1/4 cup Dry sherry or white wine
1 Red pepper (finely chopped)
3 stalks Celery (finely chopped)
3 cloves Garlic (finely chopped)
Basil and oregano fresh (finely chopped)
1/4 cup Panko bread crumbs
 
DIRECTIONS:

1. Preheat oven to 350 ºF.
2. Rinse and pat dry squid tubes.
3. Add Panko bread crumbs to the 6 defrosted crab cakes and bind. Stuff mixture into tubes. Put in an oven dish and set aside.
4. Preheat sauce pan to medium high. Add the olive oil. Add the peppers, celery, and garlic. Sauté for a few minutes. Add the sherry or wine, then add the tomato sauce. Reduce heat and let simmer for about 15 minutes.
5. Pour sauce on top of the stuffed squid. Bake for about 20 minutes.
6. Cook fettuccine or linguine noodles.
7. Serve on fettuccine or linguine noodles.
