Crab Stuffed Basa Fillet
 
Ingredients:  
4 x 6-8 oz Ocean Jewel Basa Fillet
1 lb Phillips Crab Meat (claw)
2 tsp Each of Worcestershire sauce and lemon juice
1/4 tsp Dry mustard
2 tsp Shallots (chopped)
1 tbsp Mayonnaise
1 tbsp Dijon mustard
1 tbsp Butter (melted)
1 tsp Each of parsley flakes, Cajun seasoning and cilantro
1/2 cup Bread crumbs
1 Egg
1 cup Each of black beans and corn
2 tbsp Roasted red peppers (diced)
2 tbsp Olive oil
1 cup Each of fish stock and white wine
1/2 cup 35% cream
 
DIRECTIONS:

Crab Stuffing
1. Blend together Worcestershire sauce, dry mustard, mayonnaise, Dijon mustard, melted butter, parsley flakes, Cajun seasoning, egg, bread crumbs and 1 tsp of lemon juice.
2. Gently fold in crab meat.

Basa Fillet
1. Cut Ocean Jewel Basa Fillets in half (length-wise).
2. Roll up and stuff with crab mixture.
3. Place in pan (with lid) and add white wine, fish stock and shallots. Bring to a boil and cover.
4. Place in oven at 350 ºF for about 10-15 minutes.

Roasted Red Pepper, Black Bean and Corn Relish
1. In a bowl, add the beans, corn, red pepper, cilantro, olive oil, and 1 teaspoon of lemon juice. Mix and add salt and pepper to taste.
2. Place the relish on the centre of the plate. Add 2 pieces of stuffed fish rolls on either side. Spoon a little of the stock on each fish fillet, or reduce remaining stock with 35% cream until desired consistency and then drizzle around plate.
3. Garnish with herbs or shoots and serve.
