Buffalo Shrimp Tacos
 
Ingredients:  
1/2 package Ocean JewelTM Pacific White Shrimp (90/130 count)
1 tbsp canola oil
1/3 cup prepared Buffalo sauce
1 cup shredded green cabbage
1 cup diced tomatoes
1/2 cup diced red onions
8 small corn tortillas, warmed
1/3 cup prepared ranch dressing
1/2 cup finely crumbled blue cheese
2 tbsp finely chopped fresh chives
 
DIRECTIONS:

1. Heat oil in large skillet set over medium-high heat. Add shrimp; cook for 3 to 4 minutes or until shrimp are starting to turn pink and cooked through. Remove from heat; toss with Buffalo sauce until well coated.
2. Warm tortillas in the microwave for 2 to 3 minutes or wrapped in foil paper in the oven for 3 to 4 minutes at 350°F.
3. Arrange cabbage, tomatoes and onions on top of tortillas. Top with shrimp mixture and drizzle with ranch dressing. Sprinkle blue cheese and chives over top.


Tip: Substitute blue cheese with feta or goat cheese if desired.
