Soft shell crab is a culinary term for crabs which have recently molted their old shell and are still soft while their new shell grows. During the soft shell stage, the crab is considered a delicacy. Almost all of the crab can be eaten rather than having to shell it to reach the meat. Traditionally soft shell crabs are served battered and fried, but they are also popular as a po’ boy filing.
